Mini Turkey Meatballs

1 ½ C. finely chopped cooked turkey
4 oz. can sliced mushrooms, drained and finely chopped (1/2 C.)
½ C. stuffing mix (or prepared stuffing)
1 egg
½ C. cranberry sauce (jellied or whole berry)
½ C. BBQ sauce

Combine turkey, mushrooms, stuffing mix, and egg until well blended. (I use a food processor, but it is not necessary.) Roll mixture into balls using a tablespoon to measure. Place meatballs on a cookie sheet lined with foil that has been sprayed with nonstick cooking spray. Bake in a 350 degree oven for 30-35 minutes or until heated through. While meatballs are baking, heat cranberry sauce and BBQ sauce in a small saucepan over medium-high heat until hot and bubbling. Add cooked turkey meatballs to sauce and serve hot.
NOTES: If desired, add a little orange zest and/or very finely chopped rosemary to the sauce for added flavor. Due to the range of texture between stuffing mix and homemade stuffing, you may need another egg to hold the mixture together. I have prepared this recipe with one egg and also with two eggs.
